- 5 carrots, grated
- 2 cups shredded red cabbage
- 1 cup raisins
- 1 apple diced (use some of the lemon on the diced apples to prevent oxidization)

- 2 tsp agave, honey or maple syrup
- 2 Tbsp lemon Juice
- 1 Tbsp grated ginger4 Tbsp cold-pressed oil of your choice
- dash of salt

Dissolve the honey in the lemon juice. Add remaining ingredients. Pour over salad and toss. Enjoy!
For those on a Diabetic or Cancer (low glycemic) Diet, replace the Agave, honey or maple syrup with 5 – 10 drops of Stevia. Blueberry Un-Cheese Cake

Un-cheese filling: In the food processer;
- 2 Cups cashews (soaked 1 hour)
- 1 Cup agave (or to taste)
- juice from 3 or 4 lemons
- psyllium husk (to thicken the “cheese”)
Process cashews, agave & lemon juice until smooth. Mix in enough psyllium husk to firm it up to cheese cake consistency. Keep in mind that psyllium husk is a “hydrophilic” and “loves water” so it is a fibre that soaks up water. The longer it sits the more it firms up so be careful to to add too much too soon. Once it’s mixed in and at a consistency you like, put it aside.
To make the crust, you will need;
- Almonds (soaked 4 – 8 hours)
- dates
- pecans
- fresh orange juice
Take all of the soaked almonds, rinse them and pat them dry. Put almonds in food processor (using the ‘S’ blade) with 1 cup pecans. Chop until just before it starts to turn to a butter and get sticky.
Add 1 cup dates, and chop, till the oils start to come out of the almonds and mix with the dates.
Then add the 2 Tbs fresh orange juice and it clumps into a ball then take it out and form into ball. Push evenly into bottom of pie plate to form the crust.
Now take your “un-cheese” filling and put it on top, smoothing it in evenly and then add sliced fruit or make a quick fruit sauce by blending a bit more agave with the fruit of your choosing. You can also add some spice to give it an extra kick; cinnamon, nutmeg and cardamom are great some options.
